There are a variety of items I consider a 'must-have' when backpacking in Europe or otherwise. They range from money belts to clothes pins, to power converters.
Here is a list of items I never travel without:
One pair of the convertable pants/shorts
Photocopies of all my important papers
A pen and a note book or journal

Guidebook - Your guidebook is your best resource for finding important information such as places to stay, eat, local customs, everything you need to know about the city or country that you're in. Click the link above for some great guidebooks.
Money Belts
Money Belts - Money belts are great to store your passport, money, and other essential documents. They fit snugly under your clothes around your waist, and there's no way someone can grab it without you noticing. Next to a backpack and guide book, I'd say it's the most important item you need with you. Click on the link above to view some of the different kinds of money belts.
Swiss Army Knife - The best multi-purpose tool available. Keep it handy. I use it for everything from slicing food to clipping my nails, it's useful for so many things.
Several pairs of socks - Don't go overboard, but don't be under-prepared. Your socks are going to get dirty, smelly, and wet. Keep a fresh pair of socks at all times, and wash them as much as possible.
A few pairs of underwear - Same advice as the socks. Keep a fresh pair always and wash them as much as possible.
One pair of jeans - Jeans are great because they're durable and don't really get dirty. Some people don't suggest bringing them because they can take a long time to dry when washed, but you don't need to wash them very often. If you're travelling in summer then I don't think jeans are necessary, instead keep with a pair of shorts.
One pair of convertable pants / shorts - One of the greatest inventions. Shorts for the hot summer days, and pants for the cooler evenings. Also, many religious sites require you to be wearing pants so it's a great quick fix.
Toothbrush and toothpaste - I should hope that's self explanatory.
Shaving razor - Bring a razor, but you don't necessarily need shaving cream. Try shaving with soap and you'll cut down costs and save some room in your backpack.
Photocopies of important papers - Always make a photocopy of all your papers and tickets, even your driver's license. Better safe than sorry, and many companies require at least a photocopy of your flight or your passport before they'll give you assistance.
Pen and paper - Keep it on hand for writing down contact details of people you meet along the way and for recording your experiences. It's rewarding to read through a travel journey when you're back home and re-live your experiences.
That's my list of things I always have on me before I start a trip. It by no means will work for everyone, but always remember - The less you pack the better.
