Best South American country to work and stay in

Hi. New to here. I have travelled a bit before, but I am looking to visit and work in a South or Central American country for six months to a year. Maybe more if I want to stay longer. I am trying to find out which would be the safest country to visit, with the most stable political situation. Also one where a Canadian can easily obtain a work visa and if not that, where it would be easiest to find under-the-table work. Or is that not a good idea?
