I currently live in New York City on a H1-B Visa that ends at the end of May (I was terminated in Feb). I would like to purchase a farm and wondered if a) I there were any restrictions on a Canadian buying a farm in New York state, and b) whether I could obtain a visa as a farmer.

Well first of all your H-1B status is no longer valid, employers are required to notify USCIS of layoffs of people in H-1B.
You certainly can buy a farm in the US, I think the visa you're probably looking for is E-2 -
