Hi there,
"EU" passport probably means, a passport issued by a country member of EU, and yes, this passport gives you a lot of rights in EU in general, so in France too.
You can live and work without any other special permit(maybe some east-European countries still have some restrictions regarding some jobs...).
Anyway, if you want to live and work in France is less complicated if you have an "EU" passport than a Canadian one...

Hi there,
If there is any canadian working on transport logistics or freight forwarding, I'm looking about information about jobs, especially in the South of France (Toulouse area, I do not dream about Nice... :) ). I have an EU passport too, so the problem of settling there is a little bit more simple, but I have no idea about the jobs in the area.
