You can claim a tax treaty provision for pension contributions, there's a form on the HMRC website for it.

You'll have to talk to the non-resident dept. about the NI situation, I can't remember exactly what it is, but the basic gist is that you're not subject to dual-taxation, you can claim relief from NI and pay into CPP, I think you may have to get some paperwork from CPP to support it.

You can claim a foreign tax credit in Canada for tax paid in the
UK as it explains in the general guide for the T1, bearing in mind that UK tax rates are generally higher when you get above $72,000 (roughly) or more, so you only claim relief up to a certain extent.
