Hopefully I can help with some of your questions as you get ready to head to the UK! I actually recently returned from a 2 year stay on the YMS visa - so I've done the whole process myself before.
You can't register for a NIN until you are in the UK. They actually advised me to wait until I had an employer who wished to hire me before applying - but of course, you employer cannot officially add you to payroll until you've got your NIN. The process is very easy though, and getting your NIN isn't difficult at all.
Basically, what you do once you are in the
UK is call Job Centre Plus - 0845 600 0643 - they will take some information from you over the phone, and mail out the necessary forms that you will need to fill out and submit. I think that these forms require some information on employment - hence the need to wait until you are employed (in my case anyway). I suppose though, the rules may have changed, so it may be worth calling them as soon as you arrive in the UK so that they can mail the documents to you right away if they can do that.
Once you send in the application form - they will send you a letter of approval a short time later that will have your National Insurance Number on it - as well, they will mail out your NIN card shortly after that. You'll take that letter of approval in to your employer, and they will sort out the rest! Easy!

As for logging your trip with the Canadian government - just head to -
https://www.voyage2.gc.ca/Registration_ ... ImpW8w6161 . You can register yourself on this site, and then log your trip. This way, the government here knows where you are, and in the event of any natural disasters etc, they have a record of your whereabouts and know how to contact you!
