I have a quick question. We are in the middle of processing the I 140 application. Can we still travel to the USA from Canada for day trips and vacations? Are there limitations or documentation that is required?

The I-140 is a petition, not an application. The application comes after the petitioner is approved.

Yes, legally there should be no reason you would not be able to visit the US while the petition is pending. The same rules apply that you would need to convince the CBP that you do not intend to stay illegally, and you have ties to Canada.
