I'm a Canadian teacher that moved to Australia. We got our visa on my husbands skills and I haven't yet returned back to work, so I really can't comment on what it's like here. I do know that it can be difficult to find full time permanent work in the more desirable coastal cities. So a lot of new teachers in the country end up moving to remote places to find work, or doing relief/subbing. As I said though, I have no firsthand knowledge so I'm just trying to relay what I've read from other people.
I'm going to gues by what you said that you don't have a permanent visa to either Australia or New Zealand. You mentioned a holiday visa which allow you to work in New Zealand. I don't know the specifics for the New Zealand visa but if you an Austrlian holiday working visa then you could stay there for a full year. The catch is though that you could only work for an employer for a maximum of 6 months. So it might be tough to find full time work if you can only stay for 6 months. This would be fine if you only wanted to sub or do short term contracts.
Your other options are to try and get a temp or a permanent visa rather than the working holiday visa. Not sure if you'd qualify but it's worth looking into, particularly if you want to stay longer than a year.
