Snow Patrol are from Northern Ireland, they are not Canadian! :P Excellent band though.

My canadian favorites:
Godspeed you black emperor!
Silver Mt Zion
Fly Pan Am
Destroy All Dreamers
The Weakerthans
Barzin
Below the Sea
People for Audio
Broken Social Scene
Stars
A Northern Chorus

I agree with those who mentioned:

The Weakerthans
Hot Hot Heat
Rufus Wainwright
Hawksley Workman
Tegan And Sara

and I would add:

The Dears
Arcade Fire
The Hidden Cameras
Martha Wainwright (not just Rufus' "Little Sister"!)
