3 days in Santiago

I will be spending 3 days in Santiago in Chile and was wondering if someone with the local knowledge could recommend me a couple of must to do things. I am mostly interested in nature, views and local cuisine and not afraid to get off the tourist track. I am also intersted in may be renting a car and doing a day trip.
