Opening a business (artist's gallery) in NZ or AUS?

I am a 52 year old Canadian and I am a professional Fine Art Photographer with my own gallery in the town of Niagara-on-the-Lake, Ontario. For those that do not know the area, we are a major tourist destination during the summer months of May until October. During the rest of the year business is very slow.

I am looking at options in which I can move to another local during my off-months and replicate what I am doing here. NZ-AUS is very appealing to me and may fit the bill.

Can someone direct me to a reliable source of information that I can use to determine the criteria that I as a Canadian, would need to address in order to legally set up and operate a business in NZ or AUS?

Any personal experience would be most welcome.
