School in USA, Canada job

I'm a Canadian who is applying for an I-20 to go to school in Chicago. My company in Canada is fine with me working down there. Can or how can I stay working for my company while doing school on an I-20?

You can't, unless the company you work for has a US office and you can get an intra-company transfer L1B.

If they have no US presence then you can't, essentially. F-1 students can get work authorization that allows up to 20 hours of on-campus employment per week, but obviously that's not relevant in this situation.
Plus even if you could, the Canadian company has to have an EIN and do US payroll, which I assume they're not going to do for a single employee.
