South African marrying a Canadian

Good day,

I hope someone will be able to help me....my situation in a nutshell is the following :
My fiancee is Canadian, living in Winnipeg, Manitoba. I am a South African divorcee, with children and we are trying to decide whether to settle in Canada or in SA. If we want to get married, would you recommend we get married in Canada first and then later in South Africa?
If we get married in Canada, will it be a problem to get married on a Tourist Visa? And what paperwork do I need to bring from SA when I come over?

Any help, even pointing me to the correct website, will be most appreciated.
