Hi all.

My boyfriend and I plan to marry in January 2009. We currently live in two different states, and my question is, after we file for the AOS and EAD, will I be able to quit my current job, move to his city, and look for a new job there while waiting for the EAD? I figured that after we file for the AOS I will no longer be bound to my current TN employer, but I'm not certain. My current TN visa expires July 2009.

That is correct. Use the new address rather than the old address on the AOS/EAD paperwork. You can stay without being employed once you file AOS but you cannot start a new job until you get the EAD.

Emphasise: you cannot start the new job until you get the EAD, I posted a link to a story about some Polish researcher who applied for EB-1 and was turned down because she applied for an EAD and started work and then her EAD was turned down because they didn't like her photo, so she was working out of status.
