I was planning on going to the Edmonton airport on Monday to apply for a TN visa but was wondering if anyone knew if I may encounter any problems with Monday being a holiday in the US.
If there is a scheduled flight going to US, the CBP mans their PFI stations, holiday or not, and will issue your TN prior to boarding.
You do realize that you have to be travelling to US to get the TN at the airport. TN is an entry status -- entry into US.
It's done during Pre-flight Inspection.
But if you aren't actually travelling, you will not be permitted to see CBP to get a TN.

I do know I need to go on a flight to the US and have the flight booked but it just dawned on me today that Monday is a US holiday and I might have issues getting the visa due to that. But based on your response that won't be an issue.
You should have no problem. Wasn't clear from the way you posted your question if you were simply going to the airport or not.

Be careful if you are applying at Edmonton Pre-Flight Inspection. Historically, that port has been a little rougher on TN petitions compared to Calgary and the probability of receiving a denial is perhaps inherently greater. Make certain your paperwork is in order and double check to make sure you have a solid application.
If there are U.S. bound flights on a particular holiday, then most certainly a TN could be processed at the applicable Pre-Flight Inspection.
A proper petition will be approved anywhere. Don't shop for good PFI, make a good application.

There have been postings indicating this is definitely not the case regarding the ports of entry in WA state. Both Blaine and Peace Arch crossings have consistently denied legitimate TN petitions for some time now. Thus proper petitions have been in fact turned away for no good reason. Stating anything else is issuing someone a false sense of security.
100's of TN are still being awarded, even at the POEs you mention.
