Travelling as a Minor?

Me and my friends really want to go south this march break to stay somewhere warm and travel on our own. We are all 17 year olds (about 6 of us) and we aren't sure how to go about booking a trip as minors. We have looked into it and many hotels want atleast one 18 year old per room, or a 21 year old staying with us. Can anyone give us advice? I couldn't find any similar posts. Specific destinations would be cool, we are all ready to pay and just want to go on an adventure, so we aren't looking for quality (preferably cheap, don't want to get kid napped though).
