Not a problem. So few countries now stamp passports, that looking for such stamps as proof of something is pointless.

Btw, you don't "leave canada... germany" on any passport, so you can show whatever you wish. You should always enter a country on the passport of that country if you have one, just to be safe (and courteous) but most countries do not absolutely require this (US for example does require it, canada does not). Since you live in canada, entering in Cdn passport eliminates any question as to your right to live in canada, so that only makes sense to enter on Cdn passport.

So, I would enter Europe on German passport, and enter canada on Cdn one.

I was wondering if I could still do that. Can I enter UK on my UK passport and return to Canada using my Canadian one - since now the airlines ask for your passport details when you book the flight? If I use the "wrong" passport won't that cause a problem? I thought they checked that the passport details matched what was listed on the booking. Or can I show both passports at passport control to prove my citizenship?

passport control and airlines are 2 separate things. If you've identified yourself with a certain document for the airlines, you should stick with that for the airline.

But passport control is interested in YOU, as you present yourself for entry/exit to/from their country. So to enter UK, use UK if you wish; you are only visiting. To enter canada, since you claim to live there, I would use cdn passport to show that you can live there. i would not show 2 passports at any one time.
