U-turn after getting TN-Status

Is it possible to go to POE, get a TN status and make a U-turn back to Canada to pack my belongings then fly to US at a later date to resume work?

Only if it is in the 2 weeks preceding start date. Otherwise, they will not give you TN at that time.
