Volunteering in Australia

I would like to spend about 3 months in Oz later this year as a volunteer in exchange for learning a new trade (hands-on work experience).
I'm over 30 and have been working in North America for the last 12 years and I learn by doing.
My question is, can I legally do this on a tourist visa since I would not be earning an income? I've searched the Australian Gov't website pertaining to Canucks working abroad but I didn't see anything that fit what I would like to do.
Does anyone know what the regs are or where I could find out?
