OK, so how can I explain to an employer that I want to work there long term (like 10 years or more) but that I'm not sure if that will happen cause I have to reapply for the TN every year. Why would an employer gamble on possibly not having an employee every year? Also, don't the border people catch on if you're still working for the same company year after year. Also, I want nothing to do with Canada after I leave. I can't afford two homes.

Good questions, depends on the employer; yes USCIS can catch on and it can get harder the longer you are on TN-1, various threads on here about it. Seems to be pot luck.
