Which tourist visas for Canadians in Europe?

Hi, which Eastern European countries do Canadian visitors need a tourist visa for? I'm basically interested in knowing which Pan-European countries (including Turkey, Ukraine, etc.) require a fee to enter the country? I will assume all countries not mentioned in this thread are free to enter as a Canadian tourist.

I know already Shengen rules require Canadian visitors to stay a max. 90 days in 180 day period, but what about non-Shengen European countries which are free, or visa-free for Canadians? How long can tourists stay there? 1 month? 3 months?
