Wife going to Hawaii for Vocational Training w/ family

My Wife has been accepted and is to start vocational Training in Hawaii in October for 8 months. I have been given a LOA from my current job to go and care for the boys while she is in school. What do we need a F-1, F-2 visa? Are interviews done over the phone if we live 5-6 hours from the nearest Consulate? What does that Limit me from doing.
